Recipe: Chocolate Meringues

Who doesn’t love a chocolate cookie that will melt in your mouth? Here’s what you’ll need for my chocolate meringues:

Ingredients:

4 cups icing sugar
9 Tblspn cocoa powder
1-1/2 Tblspn cornstarch (generously rounded)
7 egg whites from large eggs
¾ cup mini chocolate chips
1-1/2 cups chocolate sprinkles

Instructions:

  • Preheat oven to 350 degrees
  • Line baking sheets with SILPAT mats (or parchment paper)
  • Mix icing sugar, cocoa powder and cornstarch together
  • Add egg whites and beat with a mixer until combined, then mix on high speed for 1 minute
  • Add in chocolate sprinkles and mini chocolate chips, blend thoroughly
  • Drop by 1 tsp onto prepared baking sheet (the mixture will be runny – use ½ tsp to scoop out
    batter) I can get 16 -20 puddles per large baking sheet
  • Bake for 12 minutes or until the tops begin to crack
  • Let settle for a minute at room temperature
  • Move to a cooling rack
  • Store at room temperature only in a cookie tin
  • Should make approximately 90 cookies and they will be very light
